Racing Gloves 2020
Our first sparkling wine. Now, first and foremost, know that this ain’t trying to be Champagne. It’s made in the “col fondo” style, like the oldest-school Prosecco—which is to say, it’s refermented in the bottle for fizz, but not disgorged (so slightly cloudy if it doesn’t stand upright for a few days, aka “bottle-conditioned” for all you beer geeks).
The goal is something that’s a bit rustic in the best way: deliciously fruited, dry, and complex. This blend of (~70%) Pinot Blanc from the Chehalem Mountains and (~30%) Chardonnay from the Laurelwood District aged in barrel and tank for ~12+ months before bottling.
